regarding the ramp tours: Best is to contact the Airport Company of South Africa (ACSA) via their website www.airports.co.za and to ask them to arrange a tour for you. It is possible as far as I know, but you will have to phone or write an e-mail first, because it will take some time to get you through security checks and you wil need someone to walk with you the whole time.

Concerning ramp tours. Not going to happen at JNB anymore. They don't do public tours anymore and even if they do (most unlikely) they would probably never allow cameras.
Concerning spotting in JNB. A car is needed. The observation deck isn't amazing. There are some good and easy to find approach spots for 03R and 21L. Find Griffths Road or just ask someone for directions SkyChef's headquarters , the approach is right there.
There are other spots but you need someone who knows the airport to show you around. I don't think I'll be available to do that in the upcomming months unfortunately.
I do recommend a visit to Rand Airport. Awesome little airport with alot of GA traffic and alot of classics such as DC-4's , DC-3's , one of the only flying Carvairs and even the occasional 727. Ramp access is extremely easy. Just go to a hangar and ask if you can have a look around. SAA also have a 747-200 there thats open to the public on weekends. Very very nice little airport located just south of Johannesburg International in Germiston but should be easy to find. Other airports I recommend is Lanseria. Its in Pretoria but worth the 45-1hour drive. Lots of activity , busiest airport in Africa. Alot of 727's , loads of GA , classics , IL-76's and lots of interesting stuff. Plus regular Air Botswana F-28/ATR service plus ramp access is easy. Just ask the permit office there for access.
